Tequila Sunrise Cake with Solerno

We were asked to develop this recipe as part of an event with Solerno Liqueur.  I have to say it came out great.  Very popular with the guests.  The orange liqueur flavor was picked up a bit more in this cocktail cake than the traditional orange juice.

 What is the difference?

Hi-Proof Ingredients:

Makes 6-12 individual servings 1 Family size package (13.7 oz) of Vanilla Hi-Proof Baking Mix 2 oz water 3 oz tequila 2 oz Solerno Liqueur 1 oz grenadine FOR Two Under the Influence 1 TUI size package (4.6 oz) of Vanilla Hi-Proof Baking Mix 2 TBSP water 1 TBSP Tequila 1 TBSP Solerno 1 TBSP Grenadine

 

Hi-Proof Directions:

Preheat oven to 325 degrees. Combine Vanilla Hi-Proof Baking Mix in a bowl with all the other ingredients EXCEPT grenadine. Mix until light and fluffy (at least 2 minutes). Pour 1/2 batter into molds (about 1/3 full). Now add grenadine to the remaining batter and mix well for color. Top the molds off with the red batter. Bake for 35-40 minutes or until top sponges back. Remove from oven and optionally spray with tequila.

Lo-Proof Ingredients:

Makes 12-24 individual servings

1 18 oz package of white cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant vanilla pudding 1/2 Cup Tequila 1/2 Cup Solerno Blood Orange Liqueur 1 oz Grenadine

 

Lo-Proof Directions:

Preheat oven to 350 degrees. Beat eggs with a blender. Add all other ingredients EXCEPT the grenadine and mix for 4-5 minutes. Seperate the batter into a second bowl in roughly equal portions.  Add Grenadine to one of the bowls and blend for color.  Add up to an additional TBSP for deeper red. Spray molds with non-stick oil or line with baking cups. Using the light colored batter fill each mold about 1/3 full.  Then add another 1/3 of the red mixture to each mold. Bake for 24-27 minutes until top sponges back.

Remove from oven and optionally spray with tequila.

Presentation

Combine 1 cup powdered sugar with 1 TBSP tequila and 2 TBSP Solerno liqueur.  Mix well.  Add more or less liquid or powdered sugar for desired thickness.  Drizzle over cakes.  Umbrellas are a great addition on this presentation!
