Pink Sunrise Cake with Tequila and Kinky Liqueur

Almost everyone has been touched by breast cancer - directly or indirectly through friends and relatives.  Here's a delicious cake recipe we designed to celebrate our survivors!  It's based on a Tequila Sunrise cocktail - but replaces the grenadine with sweet Kinky Liqueur to improve the pinkish tone.  We're blessed with more survivors that look forward to more pink sunrises.

 What is the difference?

Hi-Proof Ingredients:

Makes 12-24 individual servings Here's a two tone cake that requires two separately prepared batters.  You'll need 2 13.7 oz Vanilla Hi-Proof Baking Mix, 3 oz of tequila; 5 oz of orange juice; 4 oz of water; 4 oz of Kinky Liqueur.  Optional red food coloring.

 

Hi-Proof Directions:

Preheat oven to 325 degrees. You will need two bowls.

In bowl 1 blend together 1 vanilla hi-proof baking mix with 3 oz of tequila, 3 oz of orange juice and 2 oz of water for 4-5 minutes on high.

In bowl 2 blend together 1 anilla hi-proof baking mix with 4 oz of kinky liqueu, 2 oz of orange juice r and 2 oz of water for 4-5 minutes on high.  Add several drops of red food coloring until you get the pink hue you desire.

In the prepared baking molds pour in the tequila batter filling each mold about 1/3rd.  Repeat using the Kinky Liqueur batter.  Bake for 30-40 minutes.  

Lo-Proof Ingredients:

Makes 12-24 individual servings.  2 9 oz golden yellow cake mixes; 4 eggs; 1/4 C oil; 1 pkg of instant vanilla pudding; 2 oz of tequila, 3 oz of orange juice, 3 oz of Kinky Liqueur, optional red food coloring.

 

Lo-Proof Directions:

Preheat oven to 350 degrees. You will need 2 bowls.

In bowl 1, combine one of the baking mixes with 2 eggs, 2 TBSP of oil, 1/2 package of pudding mix, 2 oz of tequila and 2 oz of orange juice.  Blend on high for 4 minutes.

In bowl 2 combine one of the baking mixes with 2 eggs, 2 TBSP of oil, 1/2 package of pudding mix, 3 oz of Kinky Liqueur, 1 oz of orange juice and optional red food coloring.  Beat on high for 4 minutes.  

Create a two tone cake by filling each mold first with the tequila flavored batter.  Than layer on top of that the pink kinky liqueur batter.

Bake for 20-25 minutes.

Presentation

FROSTING:  Combine 1 C powdered sugar with 4 TBSP butter using mixer.  Add 2 TBSP tequila.  Spread over each cake.

To create a pink frosting ribbon use pink frosting sheets.  Using a sharp knife slice a ribbon from the sheet that is 1/4" wide.  Divide each ribbon into lengths about 2.5"- 3.0" long.  Fold the ribbons over each other to create the iconic pink ribbon.
