My Grandfather would always order this drink on the rocks whenever we went out. He'd get a couple extra cherries and squeeze them into the sweet whiskey mix. A perfect mix of strong whiskey flavor and sweet cherries. What could be better than this mix for a cocktail cake?

 What is the difference?

Hi-Proof Ingredients:

Makes 6-12 individual servings 1 Family size package (13.7 oz) of Vanilla Hi-proof Baking Mix 6 TBSP of club soda or water 1/4 cup bourbon whiskey 1/2 cup sweet vermouth 1 TBSP of cherry juice (maraschino or cherry syrup) For Two Under the Influence (2 servings) Use 1 TUI size package (4.6 oz) of Vanilla Hi-Proof Baking Mix 2 TBSP of club soda or water 2 TBSP of bourbon whiskey 2 TBSP of sweet vermouth drizzle of cherry juice (maraschino or cherry syrup)

 

Hi-Proof Directions:

Preheat oven to 325 degrees. Combine Vanilla Hi-Proof Baking Mix in a bowl with all the other ingredients. Mix until light and fluffy - at least 3 minutes up to 4 minutes. Line molds with baking paper or spray with non-stick oil. Pour batter into molds. Optionally drop a cherry in the bottom of each mold. Bake for 35-40 minutes or until top sponges back. Remove from oven. Optionally drizzle the tops with bourbon whiskey.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 18 oz package of yellow cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant vanilla pudding 1/2 cup bourbon whiskey 1/2 cup sweet vermouth

 

Lo-Proof Directions:

Preheat oven to 350 degrees. Beat eggs with a blender. Add all other ingredients. Mix for 4-5 minutes to aerate the batter. Spray molds with non-stick oil or line with baking cups. Bake for 24-27 minutes until top sponges back. NOTE: Smaller molds take less time. Remove from oven. Optionally drizzle the top with bourbon.

Presentation

When baking I like to put a maraschino cherry at the bottom of each mold before you pour in the batter. It makes for a nice surprise at the bottom of each treat. Just top with a glaze made from 1 cup of powdered sugar and 3 TBSP of bourbon whiskey. Another cherry and orange slice is a nice garnish. For Two Under the Influence:

Use 2 TBSP of powdered sugar with 2 tsp of bourbon whiskey for an edgy topping. Mix, drizzle and enjoy.
