 What is the difference?

Hi-Proof Ingredients:

Makes 6-12 individual servings 1 Family size package (13.7 oz) of Vanilla Hi-proof Baking Mix 6 TBSP of orange juice 1/4 cup of spiced rum 1/4 cup of orange curacao 2 TBSP of pineapple juice 2 TBSP of orgeat syrup (almond syrup) For Two Under the Influence (2 servings) Use 1 TUI size package (4.6 oz) of Vanilla Hi-Proof Baking Mix 2 TBSP of orange juice 1 TSBP of spiced rum 1 TBSP of orange curacao 1 TBSP of pineapple juice 1 TBSP of orgeat syrup

 

Hi-Proof Directions:

Preheat oven to 325 degrees. Combine Vanilla Hi-Proof Baking Mix in a bowl with all the other ingredients. Mix until light and fluffy - at least 3 minutes up to 4 minutes. Pour batter into molds. Bake for 35-40 minutes or until top sponges back. Remove from oven. Optionally drizzle the tops with spiced rum.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 18 oz package of yellow cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant lemon pudding 1/2 cup spiced rum 1/4 cup orange curacao (orange flavored liquer) 2 TBSP pineapple juice 2 TBSP orgeat syrup (almond syrup)

 

Lo-Proof Directions:

Preheat oven to 350 degrees. Beat eggs with a blender. Add all other ingredients. Mix for 4-5 minutes to aerate the batter. Spray molds with non-stick oil or line with baking cups. Bake for 24-27 minutes until top sponges back. NOTE: Smaller molds take less time. Remove from oven. Optionally drizzle the top with spiced rum.

Presentation

Create a rum glaze with 1 cup of powdered sugar and 1 TBSP of spiced rum and 2 TBSP of orange curacao. Drizzle and enjoy. An orange and pineapple buttercream is a nice sweetener. Combine 1 cup powdered sugar with 1 cup softened butter or margarine. Add 1 TBSP orange curacao and 1 TBSP pineapple juice. Blend till stiff and spread on each sweet. And in both cases don't forget the umbrella with cherry!
