Irish Eyes St. Patricks Cocktail Cake with Creme de Menthe

 What is the difference?

Hi-Proof Ingredients:

Makes 12-24 individual servings 2 Family size package (13.7 oz) of Vanilla Hi-Proof Baking Mix 1/2 C water or club soda 3/4 C Irish Whiskey 3/4 C creme de menthe FOR Two Under the Influence 1 TUI size package (4.6 oz) of Vanilla Hi-Proof Baking Mix 1 TBSP water 2 TBSP Irish Whiskey 2 TBSP creme de menthe 

Hi-Proof Directions:

Preheat oven to 325 degrees. For TUI - mix all incredients together and blend for 4-5 minutes on high.

For Entertainer size batch, use 2 bowls.

In each bowl empty one pouch of Hi-Proof Vanilla Baking mix. Split the water evently between the two bowls. Add Irish Whiskey to one bowl and the Creme de Menthe to the other bowl. Mix on high for 4-5 minutes. Line molds with baking papers. Fill each mold about 1/3 fill with Irish Whiskey.  The top each mold with another 1/3 of the Creme de Menthe batter.

Bake for 30-40 minutes and remove from oven.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 18 oz package of white cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant vanilla pudding 1/2 Cup Irish Whiskey 1/2 Cup Creme de Menthe

 

Lo-Proof Directions:

Preheat oven to 350 degrees.

You can certainly make this as a single colored cake, but for a two tone cake, do the following.

Split the cake mix evenly into two bowls. Add 2 eggs and 2 TBSP oil to each bowl. Split the vanilla pudding in equal parts and add to each bowl. In one bowl add the whiskey.  In the other bowl add the Creme de Menthe. Blend each batter for 4-5 minutes on high. Line molds with baking papers.  Fill each mold about 1/3 fill with the Irish Whiskey mixture. Then top another 1/3 with the creme de menthe mixture.

Bake for 24-27 minutes until top sponges back. Remove from oven and optionally spray with Irish Whiskey.

Presentation

GLAZE:  Combine 1 cup powdered sugar with 2 TBSP of Irish Whiskey and 1 TBSP Creme de Menthe. Drizzle over each sweet. Top with a sprig of mint. For Two Under the Influence use only 2 TBSP of powdered sugar with 2 teaspoons of creme de menthe. Mix and drizzle of each sweet.

FROSTING (as pictured).  Combine 1 C powdered sugar with 4 TBSP margarine, 2 TBSP Irish Whiskey and 1 TBSP Creme de Menthe.  Blend until rich and smooth.  Add yellow or green food coloring and blend.  Add to pastry bag and decorate.
