Hot Apple Cider

Years ago in October my husband and I thought it would be fun to try and make our own apple cider. I argued strongly for heaps of cinammon.  But we really should have been debating the types of apples to use.  After a few misses we finally made a cider that tasted amazing with a blend of McIntosh, Jonathans and Granny Smith.  And what better way to drink amazing cider than to spike it with Brandy.  This also helped overcome misses. Now-a-days we go straight to making it a cocktail cake that we can enjoy while we watch the sunset over the changing leaves.

 What is the difference?

Hi-Proof Ingredients:

Makes 6-12 individual servings 1 Family size package (13.7 oz) of Vanilla Hi-proof Baking Mix 6 TBS of club soda or water 1/4 cup brandy 1/4 cup apple liqueur 1/4 cup apple cider 1/2 tsp cinammon For Two Under the Influence (2 servings) Use 1 TUI size package (4.6 oz) of Vanilla Hi-Proof Baking Mix 2 TBSP of club soda or water 2 TBSP brandy 2 TBSP apple liquer dash of cinammon


Hi-Proof Directions:

Preheat oven to 325 degrees. Combine Vanilla Hi-Proof Baking Mix in a bowl with all the other ingredients. Mix until light and fluffy - at least 3 minutes up to 4 minutes. Pour batter into molds. Bake for 35-40 minutes or until top sponges back. Remove from oven. Optionally drizzle the tops with apple liqueur.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 18 oz package of yellow cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant vanilla pudding 1/4 cup brandy 1/4 cup apple liqueur (apple whiskey / apple vodka) 1/2 cup apple cider 1 tsp of ground cinammon


Lo-Proof Directions:

Preheat oven to 350 degrees. Beat eggs with a blender. Add all other ingredients. Mix for 4-5 minutes to aerate the batter. Spray molds with non-stick oil or line with baking cups. Bake for 24-27 minutes until top sponges back. NOTE: Smaller molds take less time. Remove from oven. Optionally drizzle the top with apple liqueur.


For a simple topping, brush a small amount of apple liqueur on the top of each sweet and sprinkle with cinammon sugar. Or a light buttercream brandy can do the trick. Combine 1 cup of powdered sugar with 1 cup of softened butter or margarine. Add in 2 TBSP of brandy and spread on each sweet.
