I've been known to have a bit of a sweet tooth. As a kid I would swallow my veggies whole just to make sure there was no disputing the fact that I earned my dessert. I can't say much has changed. Except that now my dessert of choice might include one extra special little ingredient for adults only. And that is how I fell in love with the Grasshopper. This minty cocktail cake is sure to satisfy sugar cravings of both kids and adults.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 18 oz package of white cake mix 4 eggs 1/4 cup oil 1 3.5 oz pkg of instant vanilla pudding 1/2 cup creme de menthe 1/2 cup white creme de cacao optional green food coloring (a few drops)

Preheat oven to 350 degrees. Beat eggs with a blender. Add all other ingredients. Mix for 4-5 minutes to aerate the batter. Spray molds with non-stick oil or line with baking cups. Bake for 24-27 minutes until top sponges back. NOTE: Smaller molds take less time. Remove from oven.

Use a mint buttercream by whipping together 1 cup powdered sugar, 1 cup softened butter.

Add 2 TBSP crème de menthe and optionally use a drop or two of green food coloring (not too many - you want a light green tint). Apply to each treat. Then drizzle on some chocolate syrup.
