Boozy Mousse Dreamsicle Recipe

We were playing around with some different flavors when we stumbled upon a delicious boozy mousse combination.  The addition of peach schnapps to our mousse mix created a taste very reminiscent of those delicous dreamsicles of summer.  So - the dreamsicle boozy mousse is born.

 What is the difference?

Hi-Proof Ingredients:

Makes 10-12 individual servings 1 package Dr. Oekter French Vanilla Mousse Mix 5 ounces cold milk 2 ounces Peach Schnapps 1 ounce orange extract or triple sec

Hi-Proof Directions:

For best results, chill your bowl and beaters Combine all ingredients in a mixing bowl with a slow stir Once combined, turn on high and whisk for 3-5 minutes until thickens Pour into margarita serving cups and refrigerate for at least 4 hours

Lo-Proof Ingredients:

Makes 10-12 individual servings 3.5 ounces of white chocolate in chunks 1 TBSP butter 1 oz water 2 large egg yolks 1 oz water 1 TBSP white sugar 4 ounces heavy whipping cream 1 ounce Peach Schnapps 1 TBSP vanilla extract 1 TBSP orange extract


Lo-Proof Directions:

Combine chocolate chunks, butter and 1 oz water in a bowl and heat over steaming water.  As butter and chocolate melts slowly stir and blend together until rich and thick.  Set aside.

In a separate bowl, combine egg yolks, water and sugar and also slowly heat over a steaming pot of water.  Whisk together until eggs slightly cook.  When blended remove from heat and mix into the chocolate mixture.  Set this aside to cool (perhaps resting the bowl in cold water)

Now in a chilled bowl whip the heavy cream into soft peaks.  Add the peach schnapps and other flavors and mix well.  Fold 1/2 of the heavy cream mixture into the chocolate mixture.  Once blended add the other half using a slow mixing movement.

Pour into martini serving cups and refrigerate for at least 4 hours.


Garnish with orange sugar crystals or orange rind.
