Almond Joy Cake with Frangelico

Almond Joy candy bars are a common Halloween treat.  Well here's a two-tone cocktail cake that uses Frangelico Hazelnut liqueur along with coconut milk for a delicious adult treat.

 What is the difference?

Hi-Proof Ingredients:

Makes 12-24 individual servings 1 13.7 oz. package of Vanilla Hi-Proof Baking Mix; 1 13.7 oz package of cocoa Hi-Proof Baking Mix; 6 oz's Frangelico; 6 oz's coconut milk or coconut rum; 4 oz's of water (divided).

 

Hi-Proof Directions:

Preheat oven to 325 degrees. Use 2 bowls.

In bowl 1 blend together the vanilla baking mix with 6 oz of the coconut rum and 2 oz of water for 4-5 minutes.  In bowl 2 blend the cocoa Hi-Proof Baking mix with the Frangelico and 2 oz of water for 4-5 minutes.

In the prepared cocktail cake molds fill about 1/3 of each mold with cocoa batter.  Repeat with the vanilla batter.  Bake for 30-40 minutes.

Lo-Proof Ingredients:

Makes 12-24 individual servings 1 9 oz package of golden yellow cake mix; 1 9 oz package of devils food cake mix; 4 eggs, 1/4 C oil (divided);  pkg vanilla instant pudding mix (divided); 4 oz Frangelico; 4 oz coconut milk or coconut rum.

 

Lo-Proof Directions:

Preheat oven to 350 degrees. Use 2 bowls.

In bowl one blend together the devils food cake mix with 2 eggs, 1/2 of the oil, 1/2 of the pudding and 4 oz of Frangelico for 4 minutes.

In bowl two blend together the golden yellow cake mix with 2 eggs, 1/2 of the oil, 1/2 of the pudding and 4 oz of coconut for 4 minutes.

Fill each mold about 1/3rd full with the cocoa mix.  Then repeat with the golden yellow cake mix.  Bake for 25-30 minutes.

Presentation

FROSTING:  Combine 1 C powdered sugar with 4 TBSP butter using mixer.  Add 3 TBSP cocoa powder and mix.  Add 2 TBSP Frangelico and 1 TBSP coconut liquid.  Blend well with a mixer.  Pipe unto each cake.  Then dust with dried coconut.
